Clootie Dumpling
The Clootie Dumpling is a kind of steamed fruit cake that originates from the cities of Central Scotland. In the early industrial years, housing blocks would have shared facilities such as toilets and laundry buildings. The women folk would often make this steamed cake in the boiler tanks of the laundry building while washing their clothes.

Instructions
  1. Combine all the ingredients together in a large bowl
  2. Spoon the dough mix into the centre of a large clean cloth and tie the ends together to make a large ball of dough inside the cloth
  3. Put the dough ball cloth on a plate inside a large pot and fill with water
  4. Boil the pot for 3 to 4 hours, check occasionally that there is still enough water in the pot and top up as required.
  5. Remove from the pot and open the cloth, turn the dumpling out on another plate.
  6. Bake the dumpling in an oven at Gas 4 (170°C) for about 5 minutes or until the skin has begun to darken.
  7. Slice thin like bread and serve while warm
Recipe Notes

Mixed spice, also called pudding spice, is a British blend of sweet spices, similar to the pumpkin pie spice used in the United States. Cinnamon is the dominant flavour, with nutmeg and allspice. Blends of mixed spice may also include small amounts of cloves, ginger, coriander (seed), caraway, and cayenne pepper.
