Clouty Dumpling

1 lb of S/R flour
Currants 300 gram
Sultanas 375 gram
Suet Mix 250 gram (for puddings, pastries, & dumplings)
1 & a half cups of raw sugar
Ground cinnamon 28 gram
Mixed Spice 3 tablespoon
Treacle 3 tablespoon
1 or (one and a half cups of water)
A tin plate to put in the bottom of the pot
(or a plate that will boil for 3 hours in the bottom of the pot without breaking)
A white cloth to put the mixture in.
I cut a piece of old sheet into a circle
A shoelace to tie up the cloth
Put all the dry ingredients into a large bowl
Mix well
When mixed well
Add the 3 tablespoons of treacle
Add one cup of water to make a soft dough. You may need to add more water. Soft dough – Sticky Texture – Not too wet
Place your cloth on the bench top
Sprinkle with flour
Put soft dough in the middle of your cloth
Tie up your dumpling in the cloth. Leave room in the cloth for the dumpling to expand. Not too much as it will split when cooked
Boiling water in your large pot with plate placed in the bottom of the pot
Water level– Almost covering the dumpling
Place the dumpling into the boiling water
Let the water come to the boil after placing the dumpling in
Put lid on pot
Then turn down the gas or electric to softly simmer for 3 hours
Checking that the water level stays at almost covering the dumpling
It’s a lot of babysitting making sure the water doesn’t boil away
After 3 hours simmering take the dumpling out and carefully take the cloth off the dumpling.
Use1 another plate place it on top so you can flip the dumpling off the bottom of the cloth
Let it stand for half an hour to let the steam vaporise
Place into a warm oven to dry out and form a skin
About 100 degrees for half an hour
Turn the dumpling over so that the bottom can be dried out
Place it back into the oven for a further 15 minutes
Take out and let it cool down
This is a family size dumpling. Not a wee dumpling
I can assure you it all gets eaten 🙂 it’s never enough
