Stir Fried Carrots
Summary: A quick an easy way to cook carrots that is bursting with flavour and way more interesting than the boiled mush that is the staple in the west. This Chinese recipe is fast to make and tastes great.
Ingredients
- 2 carrots, finly chopped
- 4 cloves of garlic, chopped
- 100 grams pork or bacon
Instructions
Finely chop the carrots. You want to get it so fine as to look as if it was graited. However, resist the temptation to use a graiter. Doing so will make the carrot watery and mushy. Chopping finely with a knife prevents the carror from breaking up so it will cook nicely. Next coursly chop the garlic. Don’t crush the garlic, just chop quickly. You will not actually be eating the garlic, it’s just for flavour. Then chop up the pork or bacon.
Start by frying the pork or bacon in a little oil. When browned, add the garlic and carrots. Fry quickly on a high heat untill warmed through. Just a few minutes is enough. Salt to taste and serve.
