Spicy Pumpkin Soup

Ingredients for spicy pumpkin soup

  • 1 kg pumpkin
  • 1 litre chicken stock (or hot water plus stock cubes)
  • 1 tsp chili pepper
  • 1 tsp black pepper
  • 1 tsp cumin seeds
  • 1 tsp white sesame seeds
  • 1 tsp black sesame seeds
  • Salt to taste

Instructions for spicy pumpkin soup

  1. Preheat your oven to gas mark 4 or 180°C (356°F)
  2. Cut your pumpkin in half and spoon out the seeds
  3. Place the pumpkin on a baking tray and roast in the oven for half an hour or until soft
  4. Remove the pumpkin from the oven and use a spook to scoop out the soft flesh into a food processor (blender)
  5. Add hot chicken stock (or water plus stock cubes) an a little salt to the food processor then run the blender for a short time till all the pumpkin has been purified
  6. Pour into serving bowls
  7. Mix the chili pepper, black pepper, cumin, and sesame seeds together in a bowl
  8. Sprinkle a little of the spices on top of the soup according to your taste preferences

To make the soup spicier, add some of the spices to the soup before blending.
