Another Chinese fried Eggplant Recipe (Aubergine)
Summary: Aubergine is a very common vegetable in Chinese cooking, so today we are going to have yet another recipe using this plant. This time we are going to use the green veriety rather than the black. This is a simple dish to make and very quick.
Ingredients
- 200g pork, chopped finely.
- 1 large aubergine.
- 1 spring onion.
- 3 garlic cloves.
Instructions
This couldn’t be simpler. Put a drop of oil in a wok or frying pan and warm it on the stove. Chop all the ingredients into cubes. Put into the pan and fry untill everything is cooked through. Don’t worry that the aubergine will turn to mush, that’s normal. Serve imediaty.

For a stronger flavour, use bacon pork
